200ml fresh lemon juice
500g caster sugar

For the Cocktail (produces 850ml, serving 10)

Instructions

For the Syrup: Put all the items inside a pot, heat until it reaches a light boil, mixing to dissolve. After that, turn off the heat and let it to cool fully. Transfer into an sealable bottle, cap it and store in the fridge, where it will keep for about a month.

For the Cocktail Base: Combine the specified liquid ingredients into one large bottle, allow it to infuse for an hour, then filter it best through muslin, to ensure it's perfectly clear.

When ready to serve: Measure 85ml of the premix to a stirring glass containing ice, and stir lightly for about 60 seconds to cool it down. Filter to a chilled martini glass or similar, garnish with the cranberries adding the final touch with a light spray with the mandarin essence over the top.
